This micro-lot comes from The Nest Estate in the Lincang region of Yunnan, China, meticulously managed by estate owner Yao Dexian in collaboration with the YunYunNanNan team. Lincang’s high altitude and significant diurnal temperature variation provide an ideal terroir for producing top-tier specialty coffee.

This particular lot utilizes an innovative "Dark Room Drying" technique. After undergoing a traditional washed process, the parchment is moved into a climate-controlled, completely darkened room. By slowly drying the coffee over an extended period away from direct sunlight, the bean retains highly volatile aromatic compounds that are often lost under the sun. This process masterfully amplifies the inherent elegant florals and clean tea-like qualities of the rare Syrina (purple bud) variety.

 

這款咖啡來自中國雲南臨滄的「窩雀莊園 (The Nest Estate)」,由莊園主姚德賢與本地專業團隊 YunYunNanNan 共同打造。臨滄產區擁有得天獨厚的高海拔與日夜溫差,為精品咖啡的生長提供了完美條件。

本批次採用了極具實驗性的「暗房乾燥 (Dark Room Drying)」技術:咖啡豆在完成傳統水洗後,會被移入精密控制溫濕度的暗房內,在完全隔絕陽光的環境下進行長達數週的緩慢乾燥。這種工藝能最大程度地保留咖啡豆中不耐熱的揮發性香氣物質,將紫芽 (Syrina)品種自帶的高雅花香與細緻茶感推向極致,展現出完全不輸一線產區的純淨度。
